Paprika is made by drying and grinding ripe red peppers into a fine powder. Picked peppers are cleaned, then dried, traditionally in the sun or using a dehydrator/oven, until brittle. The dried peppers are ground into a powder, sometimes with stems and seeds removed for milder, sweeter flavour, or left in for hotter, more robust varieties.
