  • 80g rocket
  • 3 ripe peaches, destoned and sliced
  • 100g Iberico or Serrano ham

  • 135g goat’s fresh pressed cheese, ‘Queso fresco’, crumbled
  • Extra virgin olive oil

Sprinkle the rocket over a serving platter. Layer the peaches, ham and crumbled cheese over the rocket. Drizzle with extra virgin olive oil. Add a sprinkle of sea salt and a grind of black pepper. Serve straight away.
