A little twist on the classic: we’ve swapped the potatoes for Perelló Butter Beans, roasting them until crisp on the outside while staying creamy in the middle. Toss them in our spicy Brava-style Salsa Picante de Tomate and you’ve got a seriously easy tapa with just two ingredients.
Method
Preheat the oven to 200°C fan.
Drain the butter beans and rinse them well. Pat them thoroughly dry with a clean tea towel or kitchen paper. The drier they are, the crispier they’ll become.
Spread the beans out on a baking tray in a single layer, making sure they have plenty of space between them. Drizzle with olive oil and season with salt and freshly ground black pepper. Toss to coat.
Roast for around 20 minutes, or until the beans are golden and crisp on the outside.
Meanwhile, pour the Perelló Salsa Picante de Tomate into a frying pan and cook over medium-high heat for around 10 minutes, stirring occasionally, until it has reduced slightly and thickened.
Transfer the crispy butter beans to a serving plate. Spoon generous dollops of the Salsa Picante de Tomate over the top and finish with a few dollops of alioli, if you like.
