Our Sofrito de Pimiento is a ready-to-eat sauce made with piquillo peppers, onion and garlic, so the flavour base is already done for you. Just add smoky chorizo, tomatoes and a few spices, crack in some eggs and you’ve got a hearty shakshuka on the table in no time. Perfect for a lazy brunch, and best served with plenty of crusty bread for dipping.
Method
Heat the olive oil in a wide skillet over medium heat. Add the chorizo and cook for 3–4 minutes, until it releases its rich red oil and starts to crisp slightly.
Stir in the Sofrito de Pimiento, chopped tomatoes, Lamuyo peppers, cumin and smoked paprika. Bring to a gentle simmer and cook uncovered for around 8–10 minutes, stirring occasionally, until the sauce has thickened.
Season with salt and freshly ground black pepper, to taste.
Make three small wells in the sauce and crack an egg into each one. Cover with a lid and cook for 5–7 minutes, until the whites are set but the yolks are still soft.
Remove from the heat and scatter over the crumbled goat’s curd and fresh parsley. Serve straight from the skillet with plenty of crusty toast for dipping.
Top Tip: For a vegetarian option, swap the chorizo for veggie sausages or chopped portobello mushrooms. Add an extra egg if you’re feeling hungry.
