Pasta alla vodka has become a modern classic, and we can see why. We’ve given ours a Spanish twist with sobrasada, adding a rich, paprika-spiced depth to the creamy tomato sauce.
Perelló Tomate Frito is a ready-to-use tomato sauce made with onion and extra virgin olive oil, so the flavour base is already there. No chopping or frying onions is needed, meaning you can skip a few steps and get any recipe on the table even quicker.
Method
Add the sobrasada to a large frying pan over medium heat and cook gently for a few minutes, stirring, until it melts and releases its rich fat.
Add the Perelló Tomate Frito and Chopped Tomatoes. Stir well and cook for a few minutes until the sauce is hot and bubbling gently.
Add the vodka and simmer for a few minutes, allowing the alcohol to evaporate.
Meanwhile, cook the pasta until al dente. Before draining, reserve some of the pasta water.
For an extra smooth, silky sauce, carefully blend the tomato mixture until completely smooth. It’s an extra step, but well worth it for that glossy, restaurant-style texture.
Return the sauce to the pan and stir in the double cream. Add a little of the reserved starchy pasta water, stirring well, until you have a thick but silky sauce.
Add the drained pasta to the sauce and toss well. Season with salt and freshly ground black pepper.
Serve with a little extra sobrasada and crumbled goat’s curd. Finish with a generous grating of Galmesan and serve immediately.
